Prepare the lobster tails one at a time: Position the tail upside down. Using kitchen shears and starting at the thicker end, cut down each side of the tail where the feelers meet the shell. Remove and discard the feelers to expose the tail meat. Place the tail cut side up on a rimmed baking sheet.

Brush the remaining 1 tablespoon melted unsalted butter over the flesh of the tails. Sprinkle with 1/4 teaspoon Old Bay seasoning. Bake until mostly cooked through, 10 to 12 minutes. Remove from the oven and let cool until lukewarm, about 15 minutes. Meanwhile, prepare the aromatics, pasta, and cheeses.
Crawfish Tails. Make sure to use Louisiana Crawfish Tails. There is no comparison to imported tails. Both leftover tails from a boil or frozen Louisiana tails are perfect.
Gather all the ingredients, prepare them and lay them out so all you have to do is assemble the recipe. Start by cooking the pasta according to the package directions and set it aside. Next, sprinkle the crawfish tails with Creole seasoning and set them aside. Grate the cheeses, measure the other ingredients and place them all in prep bowls so they are easily reached. Finally, preheat the oven to 350 degrees Fahrenheit and prepare a casserole dish by spreading soft butter all over the inside.
What happens in this step? A rich and creamy cheese sauce is the key to making this a memorable dish. Besides binding everything together, the cheese brings a bit of bite and is the vehicle for distributing the seasonings and the level of spice you want. The cream sauce also helps distribute the crawfish tails throughout the casserole. We start with a cold Dutch oven then gradually increase the heat as the cream thickens and the cheese melts.
What happens in this step? Now we are ready to add the crawfish tails and make this into macaroni and cheese. Make sure that all the ingredients end up completely mixed and the crawfish tails are distributed throughout the casserole.
Add the crawfish tails to the cheese sauce and stir until evenly distributed throughout. Simmer the cheese sauce on low heat for a minute or two. The crawfish tails will be already cooked, so they only need to be heated through.

Cooking lobster tails at home is part of the fun! We recommend that you start by searching for the perfect lobster tail within our huge inventory of regular or jumbo lobster tails, as well as our mouth-watering lobster dinner side dishes!
The first step to making Maine lobster tails at home is finding the perfect size. Our best sellers range from 8-10oz, but we ship lobster tails ranging from 5oz to 36oz. We also offer an array of options for side dishes, as well as the supplies you may need. All of this can be shipped overnight so you can enjoy your lobster tails by dinnertime tomorrow!
Once your tails arrive, you can follow our instructions to cook them like a pro! Don't worry, for most people, cooking lobster tails is a new experience. When your lobster tails arrive, they will be brown in color and the inside of the tail will be a gray color. This is a lobster's natural color and lobster tails do not turn red until they are fully cooked!
Your lobster tails are shipped frozen in dry ice unless they are ordered with a fresh or live product. If you order was shipped with dry ice, don't worry, the gas in dry ice is as harmless as the carbon dioxide you exhale(but please don't breath it in). We would never ship your product with dangerous material, however, we do not recommend handling the dry ice without gloves. If you order was shipped with gel packs, your tails may begin to "sweat" or have water beads on the outside of the tail. Although the outer rim of the shell may be beginning to defrost, your tail meat is totally safe and can be stored properly. Once your tails are thawed, do not refreeze your lobster tails at home, the slow freezing process in a conventional freezer will actually break down the cell wall of the raw lobster meat and ruin the texture of your cooked lobster tails. Place your lobster tails in the freezer right away until 24 hours prior to use. Do not store for more than 3 months or your tails may begin to dry out.
If you want to avoid your tails sticking to the shell, thaw your tails 24 hours prior to cooking in a refrigerator inside a leak-proof container. Your tails are defrosting so they will leak fluid. If your tails are frozen and you are planning on cooking them today, that is not a problem. Put your lobster tails in a sealed bag and soak them in cold water for at least 30-60 minutes. Larger lobster tails will take longer to thaw. If you want to butterfly a lobster tail, thawing your tails will be critical because you will have to cut the meat, and you won't be able to do so if the tails are not thawed all the way.
If you aren't sure which method to use, we strongly recommend boiling frozen lobster tails because this is your best bet to avoid your tails sticking to the shell. Please read our following section to make sure your lobster tails are stored and thawed properly to ensure the best results.

Maine's ultimate luxury. Our Maine lobster tails are 4oz-5oz in size, in shell, and are perfect butterflied, broiled, or grilled, and make the perfect addition to a nice filet for that special occasion. Each 2-pack contains 2 total tails.
Maybe they are the runts of the pot, the small ones that got picked over for the big guys. Maybe they were the last few crawfish sitting in the pot, where they soaked up all those seasonings. I like to sit around with whoever else is left at the table and peel all those tails, one by one.
One complaint about crawfish is that they are a lot of work for only a little bit of meat, but once I get in the flow of peeling them, it's hard to stop, especially once you see the tails start to pile up.
I'll never forget the first year I attended, Emily and her friends were glued to the table, peeling tails with gusto, knowing that in the coming weeks, they'd have enough crawfish meat for any number of Cajun dishes.
As I've become more of a crawfish lover myself, I've taken on this passion of not letting any crawfish meat go to waste. I love to eat the leftover tails anywhere I'd otherwise use shrimp, so on top of a bowl of buttery grits, in a po'boy or with pasta.
